Brett SD medium is contains antibiotics (including cycloheximide at 50 ppm), growth nutrients, phenolic precursor (odorless p-coumaric acid) and pH indicator (Bromocresol Green). It is both selective and differential for Brettanomyces. Brettanomyces is detected based on color change and phenolic odor. When Brettanomyces reaches adequate numbers, the cells produce acid and convert p-coumaric acid to 4-vinyl phenol and then 4-ethly phenol (4EP). The high concentration of p-coumaric acid and growth enhancement characteristics of Brett SD result in a phenolic odor well in advance of any change in the wine; which likely occurs in wine when the Brettanomyces concentration is above 10,000-100,000 cells/ml.
Items Supplied: 125 ml wide mouth bottle with 85ml Brett SD Medium.
Instructions:
1. Collect 25-30 grapes and place in bottle. Cap bottle.
2. Incubate at 25-30C for up to 8 days.
3. Brettanomyces is differentiated based on color change form Greenish Blue to Yellow, turbididy and phenolic odor production.
